DE PRODUCTION CONFITURES<\/h4>\n<p>Les ingr\u00e9dients base des confitures sont: fruit, sucre et pectine de fruits.<br \/>\nLes fruits peuvent \u00eatre sous diff\u00e9rentes formes : frais, surgel\u00e9s IQF (Individual Quick Frozen) ou congel\u00e9s en blocs.<br \/>\nLes fruits frais et IQF sont directement charg\u00e9s par des cochl\u00e9es tandis que les fruits surgel\u00e9s en blocs doivent \u00eatre pr\u00e9c\u00e9demment broy\u00e9s.<br \/>\nTous les produits sont dos\u00e9s dans une cuve pour \u00eatre pr\u00e9chauff\u00e9s \u00e0 la temp\u00e9rature de concentration.<br \/>\nPectine et acide citrique sont dissous dans une solution aqueuse.<br \/>\nLe m\u00e9lange de fruits et de sucre est transf\u00e9r\u00e9 ensuite au concentrateur o\u00f9 il est concentr\u00e9, ajout\u00e9 de pectine et acide citrique.<br \/>\nDans le concentrateur on peut\u00a0 r\u00e9aliser m\u00eame la pasteurisation, en cas de produits peu thermosensibles..<\/p>\n<p>\n\t\t<div
