de Tomate"},"content":{"rendered":"<p><\/p>\n<h4>LIGNES PRODUCTION JUS DE TOMATE<\/h4>\n<p>Le proc\u00e9d\u00e9 d\u00e9crit permet la r\u00e9alisation de pr\u00e9parations soit\u00a0 pour plats pr\u00e9par\u00e9s que pour l\u2019industrie des conserves.<br \/>\nPour la pr\u00e9paration de jus, sauces,\u00a0 ragouts et rissol\u00e9s on proc\u00e8de de mani\u00e8re diff\u00e9rente selon la production qu\u2019on d\u00e9sir\u00a0 obtenir et le type de produit demand\u00e9.<br \/>\nLa cuisson peut avoir lieu sous vide ou \u00e0 la pression atmosph\u00e9rique.<br \/>\nLa cuisson sous vide permet de r\u00e9aliser des\u00a0 produits\u00a0 de qualit\u00e9 sup\u00e9rieure puisque le proc\u00e9d\u00e9 de cuisson et concentration (r\u00e9duction) du produit peut\u00a0 se produire \u00e0 des temp\u00e9ratures inf\u00e9rieures \u00e0 100\u00b0C et en temps plus brefs.<br \/>\nLe sch\u00e9ma est repr\u00e9sentatif d&#8217;une ligne\u00a0 \u00e0 production moyen-haute.<br \/>\nOn commence \u00e0 partir du stockage de mati\u00e8re premi\u00e8re liquide dans\u00a0 r\u00e9servoirs, la tomate hach\u00e9e en cubes et la tomate concentr\u00e9e sont transf\u00e9r\u00e9es des f\u00fbts aux r\u00e9servoirs de stockage.<br \/>\nLa partie solide est aliment\u00e9e avec les cochl\u00e9es ou les berlines.<br \/>\nL\u2019alimentation de tous les produits est effectu\u00e9e dans une cuve de m\u00e9lange et pr\u00e9chauffage ou directement dans le cuiseur.<br \/>\nLes dosages sont g\u00e9n\u00e9ralement effectu\u00e9s avec des celles de pesage ou compte-litres.<br \/>\nDans le cuiseur on effectue l&#8217;ensemble du\u00a0 proc\u00e9d\u00e9\u00a0 en ajoutant des ar\u00f4mes en solution aqueuse ou en poudre.<br \/>\nApr\u00e8s le cuiseur il y a le poumon d\u2019arr\u00eat qui pourvoit \u00e0 maintenir le produit en temp\u00e9rature et m\u00e9lang\u00e9.<br \/>\nEnsuite on effectue \u00e9ventuellement la\u00a0 pasteurisation pour le remplissage.<br \/>\nLe produit apr\u00e8s le
